When your farmer’s market is bursting with berries, it’s time for cobbler! Full of antioxidants and mae with almond meal, this treat is worth bragging about.
Berry Cobbler
Servings 6
Ingredients:
Cobbler
3 cups of Berries
Stevia liquid to taste (about 15 drops)
1 Omega-3 Egg
2 Tbsp Coconut Oil
2 cups of Almond Meal
Cinnamon to taste
Whipped Cream
1 can Coconut Milk solids
2 tsps Ground Cinnamon
1 tsp Vanilla Extract
4 drops liquid Stevia
Directions for Cobbler
- Preheat oven to 350. Put berries in a baking dish, drizzle with stevia.
- Blend together egg and coconut oil
- Mix almond meal completely into the batter (add extra almond meal if needed; it should be crumbly) Add cinnamon
- By hand, crumble mixture over berries
- Bake for 20-30 minutes.
Directions for Whipped Cream
- Refrigerate a can of coconut milk overnight. Open and remove solids, discard water
- Whisk together coconut milk solids, vanilla extract, stevia and cinnamon until smooth. Store in refrigerator until ready to serve
- Mix almond meal completely into the batter (add extra almond meal if needed; it should be crumbly) Add cinnamon
