Cucumber Boats with Guacamole

Cucumber Boats with Guacamole

These are perfect finger food for a party, or just a quick snack. Short on time? Opt for prepared guacamole, but keep a careful eye on the ingredients list, as some sneak in inflammatory additives and unwanted fullers.

Cucumber Boats with Guacamole

Cucumber Boats:

4 medium Cucumbers

4 ounces Tuna or Salmon (canned in water is okay)

2-3 tablespoons Guacamole (see recipe)

1-2 teaspoons Dill, to taste

Directions for Boats:

Cut the cucumber into slices about 2 inches thick, hollow out the centers, stuff with tuna or salmon, top with guacamole, and garnish with dill.

Guacamole:

3 medium Avocados

1 firm Tomato, finely diced

1/2 white Onion, finely diced

1/2 cup Cilantro, chopped

2 tablespoons fresh Lemon or Lime Juice

Herb Mix and Pepper, to taste

Directions for Guacamole:

1. Cut open the avocados and scoop out the flesh. An easy way is to cut it lengthwise around the pit and then, using a chef’s knife, strike the pit and twist the knife so you can easily remove the pit and scoop out the flesh.

2. Mash the avocado flesh with a fork.

3. Stir in the other ingredients and combine.

4. Store remainder for future use. Place a plastic wrap that touches the guacamole so it doesn’t brown because of contact with air.

Health Tip: Avocados can help with cardiovascular disease and diabetes, and have been shown to reduce inflammatory markers.
