Almond Butter Cookies
4 Omega-3 Eggs
1/2 cup Honey
1 cup Almond Butter
5 drops Stevia
1/2 teaspoon Lemon Juice
1/2 cup Walnuts, chopped
1/2 cup sifted Coconut Flour
1/2 cup Raisins (optional)
1. Preheat oven to 375°F.
2. Mix eggs well, then stir in honey, almond butter, stevia, and lemon juice. Mix well, and stir in nuts.
3. Mix coconut flour and add raisins (if using).
4. Batter is usually a bit runny. Drop by the spoonful onto a greased cookie sheet.
5. Bake for 13 minutes and enjoy.
Makes about 2 dozen cookies.
