Almond Butter Cookies
Serving 3 dozen
1 Cup Almond Butter
½ Cup Chopped Walnuts
½ Cup Honey (or less)
5 drops Liquid Stevia (or more)
½ tsp Lemon Extract
½ Cup sifted Coconut Flour
1/2 Cup Raisins (use sparingly)
- Preheat oven to 375 degrees.
- Beat eggs well
- Stir honey, almond butter, stevia, and lemon extract. Mix well and stir in nuts
- Mix coconut flour and then add in raisins if using.
- Drop by spoonfuls onto greased cookie sheet. (batter is usually runny)
- Bake for 13 minutes
