Try these alternatives: swap the cauliflower for shredded broccoli or kale, or omit the olives for hearts of palm.
Cauliflower Olive Salad
1/2 head Cauliflower, broken into small florets
1/2 cup Red Onion, diced
1 can sliced ripe Olives, drained and rinsed
1/2 cup fresh Parsley, chopped
1/4 cup Lemon Juice
1/4 cup Olive Oil
1/4 cup Mayonnaise
1/2 teaspoon No-Salt Seasoning
About a dozen Cherry Tomatoes
1. Combine the cauliflower, onion, olives, and parsley in a bowl.
2. Combine the lemon juice, olive oil, mayonnaise, and no-salt seasoning in a separate bowl. Pour over the veggies and toss well.
3. Chill for at least an hour–the longer the chill time, the better. When ready, cut the cherry tomatoes in half and add them to the salad.
