Coconut Lemon Cheese Cake

Lemon cheesecake

Coconut Lemon “Cheese” Cake

Serving:  6-8

½ Cup sifted Coconut Flour
4 Omega-3 Eggs, beaten
2 tsp Vanilla Extract (no sugar added)
1/3 Cup Lemon juice
1/3 Cup Honey (or a bit more to taste)
15 drops of Liquid Stevia (or less to taste)
1 Cup Shredded Unsweetened Coconut
¼ Cup Coconut Oil, melted
1½ Cup Coconut Milk


1. Use coconut oil to grease a pie pan. Preheat oven to 350 degrees.

2. Place all ingredients in blender and blend until smooth.

3. Pour batter into greased pie pan.  Bake at 350 degrees for about 50 minutes, or until toothpick comes out clean.

Optional: Serve with a few sliced strawberries on top.
