Cumin Spiced Zucchini Pie
1 teaspoon Cumin
1 teaspoon Chili Powder
1/2 teaspoon Garlic Powder
1/2 cup Almond Meal
Juice of 1 Lime (about 2 tablespoons)
6 Omega-3 Eggs
Cilantro, to garnish
1. Set oven to 350 °F.
2. Create thin strips of zucchini by using a vegetable peeler or spiral noodle slicer and place in large bowl. Add next five ingredients. Add two eggs, whisked, and mix gently with tongs. Pour into 9.5 inch pie dish or ovenproof skillet and spread to cover bottom of dish.
3. Crack remaining four eggs and gently place on top of zucchini pie. Bake 15 minutes or until eggs set. Garnish with fresh cilantro.
