Grain free and delicious, these pancakes will be a new staple in your breakfast routine.


Serves 2


2 Eggs

2 Tablespoons  Coconut Oil, melted- divided

2 Tbsp Coconut Milk

5 Drops Stevia

2 Tbsp Coconut Flour

1/8 tsp Baking Powder


-Blend together liquid ingredients.

-Combine coconut flour and baking powder and mix thoroughly into batter.

-Heat 1 TBSP of coconut oil in skillet. Spoon batter onto hot skillet making pancakes about 3 inches in diameter. Pancakes will flatten out as they cook. Flip once. Makes about 8 pancakes.

* Choose from ONE of the following fun options below*

-Blueberry Pancakes (Kid’s version): Make pancakes as directed above. After mixing in the coconut milk, fold in 1/2 cup frozen blueberries.

-Topping (if not adding blueberries): Warm up 1/3 cup mashed berries such as strawberries or raspberries, a little water, and stevia (to taste) and spoon over your pancakes.
