Traditionally coated in bread crumbs and then deep fried, we spin this protein packed dish into a healthy grab-n-go meal. Serve on top of a bed of mixed greens.
6 hard-boiled Omega-3 Eggs, peeled
1 pound Ground Turkey
10-12 ounces of uncooked Breakfast Sausage (from Healthy Living Guide recipe)
1 tablespoon Coconut Oil
2 Cloves of Garlic, minced
1 Yellow Onion, diced
1 medium Zucchini, shredded
4 tablespoons fresh Parsley
4 tablespoons fresh Basil
4 ounces Button Mushrooms, finely diced (about 8)
Pepper, to taste
1 teaspoon Granulated Garlic
1. Preheat oven to 325°F. In a large bowl combine all ingredients except the eggs.
2. Separate the meat mixture into 6 portions. Flatten the meat into thin patties. Set a hardboiled egg in the middle and wrap the meat over the egg and shape it with your hands to completely cover egg.
3. On a baking sheet, bake the eggs for 35 minutes. Remove and let rest for 10 minutes before slicing.
