Spinach and Artichoke Dip with Sweet Potato and Yam Chips

Everybody loves artichoke dip. Now feel good about serving your family this healthy, dairy free, creamy appetizer. Try swapping artichokes for caramelized onions and omit spinach for a french onion version. These tasty chips beat any classic french fry and are healthy to boot. Pair with the artichoke dip and feel good about digging in.

Spinach and Artichoke Dip with Sweet Potato and Yam Chips

Spinach and Artichoke Dip: 

1 (14-ounce) can Artichoke Hearts, chopped

8 ounces Spinach, frozen

1 cup Cashews, roasted and unsalted

3 tablespoons Olive Oil

1 tablespoon Garlic Powder

1 teaspoon Onion Powder

1 teaspoon Basil, dried

Salt Substitute, to taste

1/2 teaspoon Black Pepper

1/4 teaspoon Cayenne Pepper

Directions for Dip:

1. Add frozen spinach and artichokes to large saucepan over medium heat.

2. Place cashews in food processor and grind until you get a creamy consistency, like cashew butter.

3. Once your spinach is completely thawed drain the excess water from your saucepan and transfer spinach and artichoke to a large bowl. Mash with potato masher or fork.

4. Add your creamy cashews and seasonings to the bowl and mix thoroughly.

Sweet Potato and Yam chips:

2 large Yams

2 large Sweet Potatoes

1/4 cup Coconut Oil

1 teaspoon Red Wine Vinegar

1 tablespoon Onion Powder

1 tablespoon Garlic Powder

Black Pepper, to taste

Salt Substitute, to taste

Directions for Chips:

1. Preheat oven to 400°F. Line 2 cookie sheets with foil.

2. Cut the yams and sweet potatoes into small, thin slices and place in a large bowl.

3. Ina small bowl, combine the coconut oil, red wine vinegar, onion powder, garlic powder, pepper, and salt substitute.

4. Drizzle over yams and sweet potatoes to evenly coat. Place chips evenly onto the 2 cookie sheets, trying not to overlap.

5. Cook for a total of 15-18 minutes, but watch closely so they don’t burn! Turn chips occasionally while cooking.
