Spiced Salmon with Grape Tomato Basil Salsa
Serves 4
Salmon:
1 teaspoon Coconut Oil
4 large Salmon fillets
Spice Rub:
2 tablespoons Smoked Paprika
2 tablespoons fresh Thyme, finely chopped
Pinch of Cayenne Pepper
1 teaspoon Black Pepper
Juice of 1/2 Lemon
1/4 cup Olive Oil
3 cloves of Garlic, minced
Salsa:
15 Grape Tomatoes, quartered
1/2 cup Yellow Sweet Onion, diced
1/2 Serrano Pepper, seeded and diced
1/2 cup White Wine
Juice of 1/2 Lemon
1/4 cup fresh Parsley, chopped
2 tablespoons fresh Basil, chopped
Lemon slices, to garnish
Directions:
1. Make spice rub by combining all ingredients in a small bowl.
2. Spoon the rub over salmon fillets to cover completely. Cover and refrigerate for about 1 hour.
3. Heat coconut oil in a skillet over medium heat. When hot, add salmon, with skin side up. Cook for 2 minutes and turn over.
4. Add tomatoes, onion, and pepper, sprinkling between salmon fillets. Allow to cook about 5 minutes. Add wine, lemon juice, parsley, and basil. Cover and continue to cook until salmon is cooked through. Remove salmon to rest.
5. Spoon salsa over fillets. Garnish with lemon slices and parsley. Squeeze fresh lemon juice lightly over the top and drizzle very lightly with olive oil.
