It’s that time of year! Tomatoes are ripening on the vine and your garden is full! With this recipe the aromas alone are enough to entice the whole neighborhood over when you grill up these tomatoes! Use a spatula with care when flipping. These are excellent the next day on top of a salad.
Garlic Grilled Tomatoes
6 ripe, red tomatoes
Herb Mix (see recipe below)
6 cloves of Garlic, crushed
3 tablespoons of Extra Virgin Olive Oil
2 tablespoons of fresh Thyme Leaves
-Cut tomatoes in half crosswise and season with herb mix and pepper. Heat the oil in a small skillet over medium heat and add the garlic. Cook until just golden. Pour garlic and oil into a heat proof bowl.
-Preheat grill. Place tomatoes cut side down on oiled grill and grill until nicely browned (3-5 minutes), turning 45 degrees after 2 minutes.
-Turn tomatoes over and spoon the cooked garlic over the tomatoes. Continue grilling until bottoms are nicely browned, 3 to 5 minutes
-Remove from heat and sprinkle with thyme. Serve.
